Fish and Chips

Homemade !

Rory and I were talking the other night about how we never order pizza
from pizza places anymore. Seriously, it's probably
been a year since we ordered a pizza ! Maybe longer. I feel sick even
thinking about eating one ... and we used to love them !

So, tonight we were eating dinner ... homemade fish and chips and
Rory made the comment that soon we won't buy any junk food.
We'll just make the "healthier" version at home. Notice I didn't say "HEALTHY".
I'm not trying to pass this off as healthy but if you are going to
eat junk ... I say eat "healthIER" junk !

For the chips :

Cut up potatoes ... thick, thin, whatever way you like !! Line a baking dish or two with baking paper. Drizzle a bit of olive oil and spread with pastry brush to coat evenly. Into a pre-heated (400F/200C) oven for 30/45 (?) minutes. Check and turn a couple of times !



For the fish:
We used Barramundi. Beat an egg or two.
Have a plate with flour on it.
Have another plate with breadcrumbs on it.
Dip fish into egg, flour, breadcrumbs.
Shallow fry ... or could probably bake in oven.
I've done homemade chicken nuggets in the oven with similar
breading ... so the fish would probably work too !
